Lunch
Leftovers! MMMmmm. It was quick to whip up because the sauce had already been made, and shredding a zucchini takes no time flat. But since I didn’t get a chance to describe it earlier:
- Zucchini (shredded/grated “noodle style”)
- Whole tomatoes (Does that really have an “e” in it? Don’t much like the thought of “toes” in there. I always second-guess myself on this word and a similar one, ever since the whole Dan Quayle incident.)
- Dried tomatoes (adds a nice tangyness)
- Avocado
- Olive oil (cold pressed extra virgin of course)
- Garlic
Blend all the sauce ingredients together and away you go! The shredded zucchini is a nice effect, but it’s really the sauce that makes this dish.
Hmmm, now that I’m thinking of it, I probably could have put some diced onions in there, I bet that would have been nice.
Dinner
Well, it being Friday and my son courageously enduring a week of all-raw foods (some which he wasn’t especially keen on)… We went out for some Mexican food. Fortunately the place near us has a nice relatively healthy vegan selection. But this place wouldn’t know raw if it was hit over the head with a broccoli bush. I was left feeling bloaty & lethargic afterwards. I don’t know whether it was because it was cooked, or because it was loaded with fast-acting carbs.
Strawberry Banana Smoothie – Raw Food Meals 10/22/2008
Includes:
- Strawberries
- Bananas
- Orange juice
- Almond milk
- Flax seed meal
It’s been pretty hectic lately. I don’t remember what I had for lunch. Ah yes, I had lunch out because of a business meeting. It was a garden burger. Ugh, I got really sleepy afterwards and had trouble concentrating the rest of the afternoon. It’s probably full of high glycemic load carbs.
But for dinner I had Raw Spaghetti. I didn’t get a chance to snap a video of it tonight, but you can see it in tomorrow’s post (click on the Raw Spaghetti link) where I had leftovers for lunch.
Raw Carrot Curry Soup – Meals 10/21/2008
Breakfast
- Fruit salad – water melon, pineapple, and pear.
Lunch
- Organic greens salad (out with friends).
Dinner
- Raw Carrot Curry Soup
- Veggies & hummus dip
The Raw Carrot Curry Soup ended up being way too spicy. I think I put too much garlic in it. I do like a little bit of heat, but it wasn’t even an enjoyable type of spicy.
In other news, there were no further “special events” today. Ahem. ‘Nuff detail.
I ended up eating less than normal because I was so pressed for time during the day.
Raw Apple Muesli & Raw Pumpkin Seed and Rice Casserole – Meals 10/20/2008
Breakfast
- Raw Apple Muesli
Snack
- Banana
- Raw trail mix
Lunch
- Leftover Lentil Avocado Casserole
- Some hastily snarfed down grapes
Dinner
- Raw Pumpkin Seed and Rice Casserole. The rice was still quite crispy even after being soaked for over 24 hours.
Something interesting happened, which I left for the very bottom so only the dedicated will see it.
And because I care so deeply for your success, my beloved reader, I shall spare no detail when I share.
You see, I had diarrhea this morning. Which is very highly unusual for me.
I can’t say for certain what caused it. Most likely the Raw Lentil Avocado Casserole from last night. But was it something with the soaked lentils? Or the mushrooms?
Who knows. And to confuse matters further, I went ahead and had the leftovers for lunch… With no further, umm, “events.”
Just goes to remind you that you should pay attention to your body. It tries to communicate with you the best it knows how. Heed its calls for attention.
