I am so sorry it has taken so long to get back to you.  I have been trouble-shooting website issues and doing more research online.  Thank you so much for cheering me on!  I have lost another two pounds now.  I have broken the 300 pound mark as of today.  I must say, however, that the weight loss is not my main goal - though it&#039;s great!  I want to be a normal, healthy person again with an active life.  Though the pain has only subsided a little (I think it will take more time), I have experienced some very cool side effects.  My hair seems to be more manageable and the gray (yes gray at 40) seems to be subsiding a little bit.  Also, my skin and my face actually look a little younger - and prettier.  :)  I am so thrilled with the results I am having in such a short time that it&#039;s not too difficult for me to make the right choices and continue on my new path.  You know what I wish, though?

I wish we could somehow pound this information into every child, pre-teen, teen and young adult so they could have half a chance at a long and HEALTHY life when they grow up.  I have tears welling up right now, just thinking about all of the children that are going along merrily in life, not understanding what the consequences will be, how devastating they can be, when they grow into young adulthood after engaging in the SAD diet and electronic age for so many years. 

I wish the government would wake up and teach our kids the REAL healthy way to eat and WHY!

Thank you so much and I will try your cheese.  I have to be careful not to eat too much too often.  The concentration of nuts in a small amount of that cheese is heavy.  I could sit and snack on my raw sun-dried tomato &#039;bread&#039; and that cheese til it&#039;s gone.  It&#039;s comfort food.  I can&#039;t wait to try yours.</description>

Here is a great raw cheese recipe from Matt Monarch &amp; Angela Stokes Manarch:
1 cup of macadamia nuts (soaked 2 hrs)
1 sweet pepper (yellow, orange or red)
pinch salt
cayenne pepper to taste

1) Drain &amp; rinse mac nuts
2) Cut sweet pepper into small chunks
3) Put sweet pepper chunks into high power blender (or food processor)
4) Put mac nuts into power blender (or food processor)
5) Add pinch of salt to blender / food processor
6) Blend / process until smooth
7) Add cayenne pepper and blend again
8) Serve
