Raw Goji Cheesecake
I don’t eat this kind of thing very often, but once in a while I’ll treat myself.
Something unusual happened after eating this cheesecake, though.
I became very sleepy afterwards.
Now granted, I was already pretty tired from the day’s toils. But it was almost as if I had a sugar crash, which is weird because I haven’t experienced one in ages (since I stopped eating a lot of sweets, actually).
I have certainly never experienced a crash with raw foods before. And because I was tired already I can’t say for sure. But that cheesecake was quite rich.
Also, cheesecake looks not at all like a fruit or a vegetable. Which got me thinking.
When does food become “processed”? Even though it may be raw, there is a point where human meddling alters food’s health and nutritional profile.
For instance, the cheesecake is certainly sweeter density-wise than something found in nature. Can one say that the nutrients are balanced in appropriate ratios the same as in a fresh whole piece of fruit or vegetable? Probably not.
On the other hand, what if you took all the cheesecake’s ingredients and ate them all in one sitting? Or in separate sittings? Would that be any different?
My philosophy is, when in doubt, stay close to the dirt. Meaning, eat things as they come from nature with a minimum of human interference.
